Ingredients for about 25 biscuits:
Butter - 150 gms
Cornflour - 100 gms
Maida - 200 gms
Vanilla essence - 1 Tea Spoon
Icing Sugar 50 gms
Salt - 2 pinches
Ghee - 1 Tea Spoon to grease
Materials:
1. Aluminium tray to bake
2. Biscuit cutter/ a glass tumbler to cut shapes
3. Rolling plate and pin
4. Butter paper (optional)
1. Take a medium size bowl in which you can mix easily with a wooden spoon.Alternatively you can use a mixer blender( not the regular mixer). First put Butter and Icing Sugar into the bowl. Mix for 2-3 minutes, till you see a thorough sticky mix.
2. Sieve Maida, Cornflour and Salt together three times, so that it gets mixed up well. Now add this mix slowly spoon by spoon and mix for about 2- 3 minutes. Taste the mix to check if tastes sweet. If you find it to be less sweety, you can sprikle some icing sugar and mix thorougly. I have seen biscuits taste less sweeter while changing the brand of icing sugar.
3. The mix will now be not sticky and you can see a soft consistency like Roti Dough.
4. Refrigerate the above dough about 2 hours.
5. Now take out the dough, using a roll pin make Rotis for 1/2 inch thick. This is similar to as we do for Rotis, except the thickness. Dust with Maida when ever required while you roll. Roll it only on one side.
6.Use a Biscuit cutter to cut in which ever shape you may need to. If you do not have Biscuit cutters, you can use a small cup/ glass upside down to cut it round.
7. Switch microwave oven to Convection mode and Pre heat the oven in 180 C for about 10 minutes.
8. Take a aluminum baking tray and place a butter paper. Alternatively you can grease with ghee.
9. Arrange the cut shapes so that there is some space left for the biscuits to puff on the sides.
10. Bake in convention mode for about 6 - 8 minutes at 200 C. There is no hard and fast rule time to bake. You can keep looking after 5 minutes through the microwave door. Once th surface of the biscuits turen slight brownish, it is time to take them out.
11. Keep the biscuits aside for few minutes so that yo do not feel the waving heat. Serve it hot.
